As many of you are starting to see from the Recipe Box posts, I love quick and easy dinner ideas.
So here is another easy, healthy and tasty meal!

Ingredients
- 1/2 lb of chicken breast
- 1/2 cup of salsa (add more if you will use salsa as a dip)
- 1/3 cup of fat free shredded cheddar cheese (optional)
- 1/4 teaspoon of dry taco seasoning mix
- 8 (6 inch) yellow corn tortillas
- fat-free sour cream as dip (optional)
Directions
- Boil the chicken and shred
- Preheat oven to 375 degrees F
- In a medium bowl mix the salsa and chicken well
- Refrigerate for 15 minutes
- Remove mixture from the refrigerator and drain access liquid
- Add cheese and taco seasoning
- Set filling aside
- Spray baking sheet with nonstick spray and set aside
- Dampen 2 paper towels and place tortillas between them, microwave for 1 minute
- Place one tortilla on a flat surface (leave the others between the paper towels)
- Spoon two heaping spoonfuls of the filling mixture on the tortilla and spread evenly
- Roll the tortilla and hold in place with a toothpick if needed, seam side down
- Repeat until all tortillas are filled
- Bake in the oven until crispy (14-16 minutes)
- Cool for 5 minutes, then serve with salsa or sour cream if you wish
