Recipe Box: Chicken Taquitos

As many of you are starting to see from the Recipe Box posts, I love quick and easy dinner ideas. 

So here is another easy, healthy and tasty meal!

Ingredients
  • 1/2 lb of chicken breast
  • 1/2 cup of salsa (add more if you will use salsa as a dip)
  • 1/3 cup of fat free shredded cheddar cheese (optional)
  •  1/4 teaspoon of dry taco seasoning mix
  • 8 (6 inch) yellow corn tortillas
  • fat-free sour cream as dip (optional) 
 Directions
  • Boil the chicken and shred
  • Preheat oven to 375 degrees F
  •  In a medium bowl mix the salsa and chicken well
  • Refrigerate for 15 minutes
  • Remove mixture from the refrigerator and drain access liquid
  • Add cheese and taco seasoning
  • Set filling aside
  • Spray baking sheet with nonstick spray and set aside
  • Dampen 2 paper towels and place tortillas between them, microwave for 1 minute 
  • Place one tortilla on a flat surface (leave the others between the paper towels)
  • Spoon two heaping spoonfuls of the filling mixture on the tortilla and spread evenly
  • Roll the tortilla and hold in place with a toothpick if needed, seam side down
  • Repeat until all tortillas are filled
  • Bake in the oven until crispy (14-16 minutes)
  • Cool for 5 minutes, then serve with salsa or sour cream if you wish 
ENJOY!!!!

P.S. The recipe serves 4, and the taquitos are under 200 calories per serving!

Recipe Box: Vegetable Soup

Even though chilly days in Arizona are few and far between, there is nothing better than a warm bowl of soup on a cold wintry day!

This recipe is actually courtesy of my father, who passed the recipe on to me. This recipe is simple, and you most likely have all of the ingredients in your pantry and freezer! I think all of my Endo Sisters can agree that on days when we are a little, um "under the weather" this is a piece of cake! Did I mention that it is extremely healthy and budget-friendly??

 
The ingredient list is very simple really - and can be catered to your personal taste!

Ingredients
  • Meat of your choice (Ground turkey, Ground beef, Stew meat)
  • 2 jars of tomato juice (any brand)
  • 3 bouillon cubes
  • Canned or frozen vegetables of your choice (corn, green beans, peas, carrots, okra, etc.)
  • chopped onion 
  • Diced tomatoes (I buy canned, because of the convenience)
  • 2 whole potatoes (or canned)
  • hot sauce

Directions
  •  Season and brown the meat of your choice in a skillet
  • While the meat is cooking, peel and cut potatoes into small pieces (or skip this step by using canned potatoes)
  • Drain any fat from the meat
  • In a large pot, combine all ingredients. 
  • Let the mixture boil on medium heat for one hour, stirring occasionally 

That's it! It is so simple and soooo good!!! I usually make a larger portion and freeze the soup!

Recipe Box: Chicken & Pepper Egg Rolls

I recently stumbled across this recipe and thought that it looked delicious! So, I decided to share with you...

Ingredients
  • 1 pound boneless, skinless chicken breasts, cut into thin strips
  • 2 large bell peppers (any color) cut into thin strips
  • 1 medium onion, sliced thinly
  • 2 tablespoons soy sauce
  • 1 clove garlic, minced
  • 1 teaspoon freshly grated ginger
  • 12 egg roll wrappers
  • oil for frying 
 
Directions

Heat a large pan over medium-high heat and add 2 Tablespoons oil. Cook chicken strips just until no longer pink. Push to one side of pan. 
 Add pepper and onion and cook for 5 minutes, stirring often.
Add soy sauce, garlic and ginger and stir well. Cook until most liquid has evaporated.    
Remove from heat and cool for 15 minutes. This is important; adding hot ingredients to the egg roll wrappers will cause them to break down and leak.
Once cooled, lay several strips of chicken, onion and peppers in the center of an egg roll wrapper that has been laid on a surface with one point toward you. Fold the right point over and under the filling. Fold the top and bottom points down and roll from right to left, securing the left point with a touch of water.

Repeat with all wrappers and filling. Heat 1/2 inch of oil in a skillet over medium heat. Fry egg rolls, turning over once during cooking, until golden brown. Drain on paper toweling.

Note
Alternately these can be baked in the oven at 350 degrees F for 10-12 minutes or until browned.

This recipe makes 6 servings.
If fried, it is not the most healthy recipe in the world.. but we are allowed to cheat every once in a while, right?? :)
