Recipe Box: Vegetable Soup

Even though chilly days in Arizona are few and far between, there is nothing better than a warm bowl of soup on a cold wintry day!

This recipe is actually courtesy of my father, who passed the recipe on to me. This recipe is simple, and you most likely have all of the ingredients in your pantry and freezer! I think all of my Endo Sisters can agree that on days when we are a little, um "under the weather" this is a piece of cake! Did I mention that it is extremely healthy and budget-friendly??

 
The ingredient list is very simple really - and can be catered to your personal taste!

Ingredients
  • Meat of your choice (Ground turkey, Ground beef, Stew meat)
  • 2 jars of tomato juice (any brand)
  • 3 bouillon cubes
  • Canned or frozen vegetables of your choice (corn, green beans, peas, carrots, okra, etc.)
  • chopped onion 
  • Diced tomatoes (I buy canned, because of the convenience)
  • 2 whole potatoes (or canned)
  • hot sauce

Directions
  •  Season and brown the meat of your choice in a skillet
  • While the meat is cooking, peel and cut potatoes into small pieces (or skip this step by using canned potatoes)
  • Drain any fat from the meat
  • In a large pot, combine all ingredients. 
  • Let the mixture boil on medium heat for one hour, stirring occasionally 

That's it! It is so simple and soooo good!!! I usually make a larger portion and freeze the soup!
